Aronia berries are fun and fresh to eat right out of the bag! But if you're looking for a more creative way to use your berries check out these recipes:
Aronia Berry Smoothie
1 Cup Plain Yogurt
1 1/2 Cup Coconut Milk
1 Cup Frozen Aronia Berries
1Cup Frozen Raspberries or other fruit
Aronia Berry Jam
2-3/4 cups Blueberries
1-1/2 cups Aronia Berries
1 package (1.59 oz) of freezer jam pectin
2 cups sugar
Makes 3 Cups
Berries should be free of stems and rinsed well. Allow berries to reach room temperature. Combine blueberries and aronia berries in a food processor and pulse until coarse. Mix powdered pectin with sugar in large bowl. Stir to blend and eliminate chunks. Add berry mixture and stir until combined. Let jam rest for 30 minutes.
Ladle jam into clean prepared containers, leaving 1/2 - to 3/4-inch headspace. Wipe container rims and place lids on containsers. Remove jam from freezer and thaw in refrigerator before use. Jam should be stored in refrigerator after opening.
Chocolate Aronia Cake
1 box Cake Mix (Chocolate)
1-1/4 cup Aronia Juice
1/4 cup Water
1/2 cup Vegetable Oil
3 Eggs, Large
1 cup chocolate chips (optional)
1 cup chopped almonds (optional)
Makes 8-10 servings
Prepare cake mix according to directions substituting aronia juice for portion of water. Can be made as a layer cake or a sheet cake. Add frosting of your choice and enjoy!
